Recipe for Vegan Banana Bread

Banana Bread is everyone’s favorite. This delicious recipe stands on its own merits, but it can easily be used as a base for the more inventive recipes. Simply add some nuts, vegan chocolate chips, coconut, dates … the list is endless! This recipe has a only a few less calories compared to non-vegan banana bread, but swaps a lot of saturated fat for healthy complex carbohydrates. Salt, usually present in bread recipes, is shown here as optional (as there is no yeast, and no need for salt as an inhibitor). Without salt the sodium content is quite low.

Wet ingredients

  •  4 large bananas (or 6 small) 
  • ⅓ cup of vegan spread
  • 3/4 cup
  • of maple syrup 
  • 1 tsp of fresh lemon juice
  • 1 tsp of vanilla extract

Dry ingredients

  • 2 cups of unbleached all-purpose flour
  • 1 cup of whole wheat pastry flour
  • 1 tsp of baking soda
  • 2 tsp of baking powder
  • ½ tsp of salt (optional)
  • 2 tsp of ground cinnamon
